Oatmeal Banana Pancakes
Recipe from the kitchen of The Inn at 410
4 cups unbleached white flour 2 teaspoon salt 4 teaspoons baking powder 1 teaspoon ground nutmeg 1 cups quick oats 4 eggs slightly beaten 4 cups milk 4 tablespoons vegetable oil 4 tablespoons sugar 4 cups sliced ripe bananas Stir together the flour, salt, baking powder, and nutmeg. Add the oats and mix well. In a separate bowl, stir together all of the wet ingredients. Make a well in the dry ingredients and stir in the wet ingredients just to combine. Cook on griddle until bubbles appear on top. The bananas will settle to the bottom, so you want to flip these as soon as bubbles start to form to avoid scorching them. Cook on second side until golden brown.
