Multi-use GRANOLA
Recipe from the kitchen of Legacies Bed and Breakfast
Mix together: 6 c. oatmeal-Old Fashioned, not minute oats 1 c. shredded coconut-frozen or fresh 2 c. chopped walnuts, or pecans, almonds, or combos 1 c. wheat germ
In a 2 qt. Handled pan, mix 1 c. oil (canola or olive) ½ c. pure maple syrup 1 ½ cups brown sugar
bring to boil, for several minutes, stir until all ingredients are dissolved.
Pour this mixture over the oatmeal mixture and stir until all is coated.
Preheat oven to 350 degrees.
Place half of mixture each on 2 cookie sheets, spread out. Place on 2 center racks, bake for 8-10 mins, take out and stir mixture and alternate cookie pans (unless you have room for 2 cookie sheets on one rack) bake for another 8-10 minutes, WATCH AND MAKE SURE IT DOES NOT OVER BROWN! Cool completely; add 1 cup raisins, and 1 cup craisins to each mixture. You can store in gallon zip lock bags. Recipe makes a large amount of granola!
USE IN YOUGURT, OVER ICE CREAM, ON FRUIT COMPOTES, OR BY ITSELF!
