Hopi Blue Corn Pancakes
From the kitchen of the Abineau Lodge Bed and Breakfast
Blue corn meal is a specialty product from the southwest.
May be available in natural food stores or gourmet food sections of your supermarket.
Ingredients:
1-3/4 cups blue corn meal
3/4 cup unbleached white flour
1 Tablespoon baking powder
1/2 teaspoon salt
2 Tablespoons sugar
4 Tablespoons melted butter
4 eggs, beaten
2 cups milk
Combine dry ingredients. Beat eggs with milk, slightly, carefully add melted butter.
Add liquid ingredients to dry and combine. Let sit for 5 minutes before cooking on medium griddle.
Serves: 6 to 7 (makes approximately 22 five-inch pancakes).
